Raj Kachauri (A Spicy Snack) Recipe Ingredients
1 cup refined flour
2 tbsp ghee
1/4 tsp salt
water
oil for deep frying
Filling
1 cup potatoes-boiled and diced
1/4 cup kachaloo-boiled, peeled and chopped fine 1 cup anaar-peeled
1 cup yogurt-beaten smooth and thinned a little if desired
1/2 cup sonth ki chutney of pouring consistency
2 tsp cumin seeds- roasted and powdered
1 tsp ajwain-roasted and powdered
1 tsp coriander seeds-roasted and powdered
1 tsp black salt-powdered
chilli powder
ginger-very thinly sliced
coriander leaves for garnish
Sonth
100 gm tamarind pulp
3/4 cup jaggery- broken up
2 tsp salt or to taste
1 tsp black salt-powdered
1 tsp powdered dry ginger
1/4 tsp kali mirch
1/4 tsp chilli powder
Raj Kachauri (A Spicy Snack) Recipe Procedure
Knead the maida, salt and ghee to a stiff dough with water. Roll to 1/8? thickness, cut into rounds and fry first over high heat, then low, till a golden colour on both the sides. They should puff up (some may not, which does not matter).
Mix sonth ingredients together and bring to a boil, then simmer over low heat, till thick
To make up, break an opening in one kachauri for the filling.
Fill the filling ingredients into the cavity of the kachauri and serve.
