Seafood Platter Recipe Ingredients
5-6 Oysters or as many as you will serve
5-6 sea prawns
5-6 green mussels
For the red chilli dip
1 tsp chopped garlic
1 tsp chilli paste made with whole red chillies ground with a little water
1/4 cup water or stock
1 tsp coriander stems chopped
1/2 tsp lemon grass
2 tsp white vinegar
1 tsp chopped basil
To make the green chilli dip
8-10 green chillies
1 tsp fish sauce
1 tsp sugar
2-3 tsp lemon juice
Seafood Platter Recipe Procedure
For the red chilli dip, add all the ingredients and make a sauce over slow heat. Add chopped basil leaves.
To make the green chilli dip, grind all ingredients into a paste.
Remove the head and de-vein the prawns. Steam the prawns and mussels in their shells.
Serve all three starters with the dips.
