Keema Dum (Spicy Minced Meat) Recipe Ingredients
1/2 kg minced mutton/lamb
1 tsp ginger paste
1 tsp garlic paste
1/4 cup chopped raw papaya - unpeeled
1 tbsp coriander seeds
6 cloves
6 green cardamoms
1 tsp cumin seeds
1/2 tsp broken up cinnamon
1 black cardamom seeds only
1/2 tsp broken up mace
1/8 tsp grated nutmeg
4 peppercorns
2 cups onions-sliced thinly browned crisp in 1/4 cup ghee and ground
2 tbsp mustard oil
2 tsp salt
1 tsp red chilli powder
1 piece of coal
1/2 tsp ghee
2 cloves-powdered
2 tbsp chopped coriander leaves
Keema Dum (Spicy Minced Meat) Recipe Procedure
Dry roast, coriander seeds, cloves, green cardamoms, cumin, cinnamon, black cardamom, mace, nutmeg and peppercorn. Powder.
Mix the meat with powdered ingredients and the onion paste and marinate for two hours at least.
Heat the oil in a heavy bottomed saucepan with a tight fitting lid. Add the meat, salt and red chilli powder mix well and cook over low heat, covered, till cooked through, takes about 20 minutes. Do not stir while cooking. The fat will separate when cooked.
Before serving, light a coal, place it in aluminium foil made into a cup shape. Place this in the centre of the cooked meat, pour the 1/2 tsp ghee and the powdered cloves over it and cover immediately.
Leave this for about five minutes, remove the coal and serve garnished with the coriander leaves.
