Bangaladumpa Palakura Vepudu Recipe Ingredients

Bangaladumpa Palakura Vepudu Recipe
800 gms Red Spinach
200 gms Potatoes (peeled and diced)
90 gms Coconut (grated)
Salt to taste For Tempering 2 tbsp Coconut Oil
1 tsp Mustard Seeds
1 tsp Urad Dal (washed and dried)
1 Onion (sliced)
2 sprigs Curry Leaves
1-inch piece Ginger
6 Green Chilies

Bangaladumpa Palakura Vepudu Recipe Procedure

Boil the potatoes in salt water.
In a skillet, heat the oil and add mustard seeds.
When the mustard seeds start to splutter, add the Urad dal and fry until golden brown.
Add the onions and fry till translucent.
Then add the ginger, green chilies, curry leaves and fry well.
Add the spinach and cook till dry.
Now, add the potatoes and then cook till the moisture evaporates.
Finally, mix in the grated coconut and stir for a minute.
Serve hot.
