Recipe Ingredients
4 flour tortillas
2 tbsp oil
1/4cup onion-chopped
2/3 cup red kidney beans-cooked
1 tsp coriander powder
1/4tsp chilli powder
salt to taste
1/2tsp cumin powder
1/4tsp dried oregano
4 tbsp hung curd
4 sliced cucumber or lettuce leaves
8-10 black olives-pitted and sliced
1/4cup Mozarella cheese-grated
4 tbsp Salsa or to taste
Recipe Procedure
Heat the oil and add the onions, and brown lightly.
Add the beans, coriander, chilli powder, salt, cumin and oregano and stir ?fry.
Add about 1/2cup water and cook till beans are very tender. Take them off the stove and mash with a fork.
To make the burritos, take a tortilla, spread the bean mixture in a thin layer.
Top with some curd, slice of cucumber or lettuce, olives, cheese and salsa.
Roll like a jellyroll and serve, with extra salsa on the side. The layers come while rolling. The bigger the tortilla, the more the layers.
