Recipe Ingredients

Makes 1 kg
1 kg plums-chopped
250 gm sugar
2 tbsp salt
1 tsp chilli powder
1/8 tsp cinnamon
4 cloves
2 tbsp vinegar

Recipe Procedure

Place plums in a glass or steel vessel and cover with water. Leave overnight.

Next morning, rub the mixture and remove seeds. Add sugar, salt, chilli powder cinnamon and cloves and heat over low heat, stirring all the time to dissolve the sugar.

Increase the heat and bring to a boil and let cook till thick�a drop dropped in cool water should set.

Add the vinegar and simmer for about 5 minutes. When cool, pack in an airtight clean jar and store.
